Lemon juice 45 ml (1½ oz)

Sugar 10 ml

Egg white 1

Lemon peel 1 piece

Glass: coupe glass

Garnish: lemon peel

Tools: shaker (or jar with lid)
Instructions

Chill a martini glass in the freezer

Combine all ingredients in a shaker

Shake hard (no ice) for 30 seconds
